Some of you may know my love for craft cocktails from my kick off to The Passion Project at Vera Pizzeria. When I heard The “Timmer” was back in town to open his own joint, I knew I needed to include him in my project.
Tim spent the last 8 years in San Diego, met Morgan, the love of his life, and honed his skills creating some of the best cocktails in some of the best bars on the West coast. Some of those places included managing/head bartender positions at Prohibition, Seven Grand and The Bitter End. Now he’s back to open his own gin joint in the Buffalo area with plans to open three more in the next 5-6 years. Tim is very close to opening his first place, so keep on the look out for it.

If you’ve been to Hutch’s restaurant lately, you might have noticed a big change in the bar area. Big beautiful wooden shelving to hold the big beautiful collection of super yummy whisky. Super. Yummy. Whisky. This is all thanks to Tim and the consulting work he did for Mark Hutch. Tim trained the already seasoned bartenders on the finer points of craft cocktail bartending and created a fantastic selection of Bourbons and Ryes.
